Mozzarella, beef and green apple tartar

Recipe for: 4 people

Ingredients:

480 g beef rump
40 g desalted capers
40 g desalted anchovies
1 sprig marjoram
1 lemon
20 g Olitalia Ogliarola Monocultivar extra virgin olive oil
250 g buffalo milk mozzarella
300 g green apples
60 g ginger
salt and pepper


Method:

Remove the cores from the apples, blend with the ginger and filter the resulting juice. Drip dry the mozzarella and blend. Remove the fat from the meat, cut it up into small squares and add the capers and minced anchovies, marjoram, grated lemon peel, Olitalia Ogliarola Monocultivar extra virgin olive oil, salt and pepper. Place the meat on a serving dish, adding the mozzarella quenelle and finishing it off with the green apple and ginger juice.
