Ice Cream with Olitalia Nocellara Monocultivar extra virgin olive oil and wild berries

Recipe for: 4 people

Ingredients:

500 ml milk
100 g granulated sugar
50 g glucose
1 lemon
80 g Olitalia Nocellara Monocultivar extra virgin olive oil
200 g wild berries
60 maple syrup
50 g powdered sugar


Method:

Heat the milk, sugar, glucose and lemon peel at 80°C (175°F) and allow it to cool. Filter the mixture, add Olitalia Nocellara Monocultivar extra virgin olive oil and put through an ice cream freezer. Marinate the wild berries with the maple syrup for 15 minutes. Serve the ice cream with the wild berries and sprinkle with powdered sugar.
