Quartirolo cheese with cream of pumpkin and balsamic vinegar of Modena P.G.I.

Recipe for: 4 people


600 g pumpkin
150 g Quartirolo cheese
100 g leek
1 leaf laurel
vegetable broth
4 g oregano
30 g Olitalia Frantoio Monocultivar extra virgin olive oil
15 g Balsamic Vinegar of Modena P.G.I. - OLITALIA GOURMET


Cut the leek up into small squares and brown them in a pot with half of the available oil, the laurel and 100ml of broth. Add the peeled and diced pumpkin (without seeds), cover with broth and add salt and pepper. Once cooking is complete, take out the laurel and blend. Cut the Quartirolo into small squares, place on a plate and garnish with pepper, crunched up oregano and the remaining oil. Let sit for 10 minutes. Pour the pumpkin cream on the serving plate and add the Quartirolo and the Balsamic Vinegar of Modena P.G.I. - OLITALIA GOURMET.
